What it is
Pectin is a natural fiber found in the cell walls of fruit, especially apples and citrus peel. It is the same ingredient that sets homemade jam.
How it makes a gummy
When pectin is heated with sugar and a little acid, it forms a soft gel. That gel is what gives a gummy its pleasant chew, without animal gelatin.
